I thought it would be fun to do another “what I ate today” post. Tomorrow is my long run, 16 miles, so here is what I am eating the day before to prepare!
7:00 am Breakfast
Oatmeal with a spoonful of PB
Iced coffee with Vital Proteins collagen protein
Mexican Bowl – using mostly leftovers
Rice, pinto beans, Brussel sprouts, tomatoes, pumpkin seeds, lettuce, dressing (olive oil, apple cider vinegar, and Dijon mustard)
2:00 pm Snack
while running errands
4:00 pm After-School snack
7:00 pm Dinner
(Left-overs)Tomato sauce with Bison and noodles topped with a little ricotta
I love making big batches of food for leftovers during the week! What do you typically eat the day/night before a long run?
I’m kind of all over the place lately with what I eat the day before a long run. Typically mornings never change; was a Larabar, now the Health Warrior protein bar. Normally I have a short run, so afterwards I try to push a little more carbs than usual; sometimes a sandwich, or chicken and rice and salad. For dinner, I always would do pizza, but lately I have had gnocchi; last week I think I had a twice baked sweet potato with 2 eggs over easy on top, with an english muffin. Tomorrow I also have 16 miles, but have NO idea what the bfs mom is making for dinner. Hmmm..

Have a great long run!! We usually do pizza once a week! Love pizza! Lol! Hopefully you have a yummy dinner with the BF and family!!

That lunch looks amazing! I eat leftovers all the time too. I typically just eat “normally” the day before a long run, but before a few I make sure to practice my pre-marathon dinner (1-2 baked sweet potatoes, grilled fish or chicken, a cooked veggie, a piece of fruit) — although this is a pretty normal dinner for me anyway.

The Mexican bowl is one of my favorites! I just throw whatever I have together! I need to start eating more sweet potatoes. Love them, but haven’t been making them lately! Thank you!!! I get so many ideas from your posts btw;)
